Boombozz Pizza & Taphouse is introducing a Neapolitan-style fried pizza dubbed the Montanara.
That’s right, fried pizza, but it’s probably not what you’re thinking … “Didn’t I have one at the state fair, something to fend off the nasty aftertaste of that Krispy-Kreme burger?”
The answer is, no, you haven’t, not at the KFEC, anyway. This is different. It’s really Italian, Neapolitan, in fact, and, according to Boombozz creator, Tony Palombino, really good.
Montanara—which is translated loosely as “a mountain topped by marinara”—begins with a small dough ball stretched thin and flash-fried, in palm or peanut oil. Once lightly crisped and puffed up (about a minute on each side), the dough is removed from the oil, topped with San Marzano tomato sauce, fresh mozzarella and a single topping and then baked.
